Montgomery Cheddar (North Cadbury, Somerset)
A traditional, farmhouse, clothbound cheddar made by the Montgomery family at manor farm since the 1930s. It is sold at 12-18 months and has a strong, nutty flavour. Cheddar has been made in this region of Somerset, Mendip hills and the Cheddar Gorge since at least the 16th century
Cropwell Bishop, Stilton (Nottinghamshire)
Stilton is a name-protected cheese and can only be produced in Leicestershire, Nottinghamshire and part of Derbyshire. The Cropwell Bishop Creamery produces a cheese with an ivory paste and extensive blueing that marries well with the creaminess of the milk.
Gubeens (Cork)
A semi-soft, pasteurised cheese which has a yellow-ochre washed rind. The Fregussons first started making the cheese in 1980 from their dairy herd in County Cork. The maturing cheeses are brine washed every other day for 3 weeks before being distributed for sale.
Ragstone (Dorstone, Hereford)
This goats cheese is named after Ragstone Ridge in Kent but is now made near Hay-on-Wye in Herefordshire. The cheese is moulded in tall pipes and is light and smooth, with a light infusion of honey.
