Montgomery Cheddar (North Cadbury, Somerset)
A traditional farmhouse, clothbound cheddar made by the Montgomery family at manor farm since the 1930s. It is sold at 12-18 months and has a strong nutty flavour. Cheddar has been made in this region of somerset, Mendip hills and the cheddar gorge since at least the 16th century

Stichelton-Joe Schnelder (Nottinghamshire)
Flavours are cool and buttery with underlying nutty toasty notes. There is a spicy element from the blue mould but alongside that is a long lasting savouriness and caramel like sweetness. The layers of the flavour expand and develop in your mouth as you eat and long after swallowing

Tymsboro Goats Cheese (Timsbury, Bath)
A semi-soft, ash covered, truncated pyramid which develops a bloomy rind through the ash layer as the cheese matures. It is made by Mary Holbrook at Sleight Farm using milk from her own goat herd.

St James (Holker Estate, Cumbria)
St James is named after the late James Aldridge who was a cheesemaker, maturer, champion of farmhouse cheese-makers and unpasteurised cheese and friend of the Gotts. The flavours are savoury, salty and meaty – sometimes even reminiscent of smoked ham. The textures can vary quite a bit from quite a crumbly interior with moist breakdown under the rind to smoother and creamier all the way through.
